Cassoulet

This is from my friend Allison.  It is an outstanding recipe.  You can do almost anything with it and it tastes SO GOOD!!!  A real Cassoulet takes hours and hours.  This one is done in less that 45 min!

Brown sausage meat in a sautee pan.  Once the meat is brown, remove from the pan and dump most of the fat.  Slice an oinion very thinly and sautee it in the same pan. Mince 2-3 cloves of garlic, put in sautee pan. When onions are golden, add sausage meat. Add 2 cans of diced tomatoes, and one can of white beans, add thyme, parsley, salt & pepper, and any other spice you want. Let simmer about 20 min. Add grated cheese before you serve. Serve by itself or with crusty bread.
You can also use chicken meat, lamb, other types of beans, etc.  It's fabulous.
