Thai Chicken Curry
The Basil Coconut Chicken Curry is from Simply Recipes. I love that site.

Olive oil
2 onions sliced
2 jalapeno diced
3-4 cloves of garlic (diced or in garlic press)
2T curry powder
1tsp salt
1/2 tsp pepper
1 tsp ground ginger
chicken finley sliced
2 cans of coconut milk (the real stuff, not light)
1T lime juice
10 lg leaves of basil, torn
In large pot, heat up oil, sauté onions and jalapenos Allowing to sear. (don't move them too much). Add garlic for about 30 seconds. Add the spices, let cook about 1-2 min and coat the onions. Add the chicken and the coconut milk. Let simmer 15-20 min. Add the lime juice and basil. I served with brown rice. It was awesome.
Then I ate some chocolate ice cream.
Today: coffee with cream and sugar. A piece of toast, half a smoothie because that Olivia kid drank the rest. No kidding. Lunch as the rest of the Chicken Curry and an apple. Dinner was 2 chicken and spinach sausages, a mound of green beans, and an entire container of mushrooms, sautéed.
Not bad. Not perfect, but not bad.
