Butternut Squash Apple Cranberry Bake

Holy smokes - We ate nothing but this for almost a week. I was eating it for breakfast (I hate breakfast foods).  The kid ate it, I ate it, we went through 4 butternut squashes in one week.   I brought it to a retirement party pot luck, I took NOTHING back home. 

  • 1 large butternut squash, peeled and cut into 1-inch cubes
  • 2 large tart cooking apples (like Granny Smith), peeled and cut into 1/2-inch squares
  • 1/2 cup fresh or frozen cranberries
  • 1/2 cup brown sugar
  • 1/4 cup (half a stick) butter
  • 1 Tbsp flour
  • 1 teaspoon salt
  • 1/2 cup pecans
  • 1/2 teaspoon ground nutmeg or mace or cinnamon
1.  Bake the squash for 30 min at 350.
2.  Add the apples, pecans, and cranberries.
3.  Mix the dry ingredients, sprinkle on top.
4.  Dot with butter.
5.  Bake for 20-25 minutes.
