Salmon Nicoise Salad

Roast salmon, or pan fry, then let it cool.  Break into bits.

Blanched green beans.

Cut up some Nicoise olives.


Handful of salad greens.

Tomato pieces.

Anchovy (optional)

Lemon vinaigrette -

1/4 c lemon juice
1/2 c olive oil
salt, pepper, tarragon
1/2 t garlic (one clove minced)
1/2 t mustard

Shake it together in a jelly jar. 

Dress the salad.
