I got this from Skinnytaste.com. This blog has good low fat and low calorie recipes. This one is superlative!! The first time I made it, I ate so much of it, I had to pack some up for my mother so I wouldn't eat the whole thing in one sitting. That is frowned upon in dieting circles.
Ingredients:
- 4 cups cooked sweet yellow corn, cut
- 2 ripe tomatoes, diced
- 1/2 red onion, diced (I will use sweet onions next time)
- 1 scallion, diced
- 1-2 jalapeños, diced (remove seeds unless you like it really spicy)
- 2 tbsp chopped cilantro (I used parsley instead)
- 1 1/2 limes, juice of
- chipotle chili powder, to taste
- salt and fresh pepper to taste
Mix it all together and refrigerate it for an hour or so. Then, be careful not to eat the entire bowl!!
