Tuscan White Bean, Shimp, and Spinach Recipe

Sautee 1/2 or 1 pound of shrimp in 1-2 olive oil in a pan.  Take them out and keep them warm.  Add 1/2 cup of finely diced onion and sautee until soft and golden. Add 2-3 minced cloves of garlic, sautee for about 30 seconds (until you can smell it).  Add 1 tsp of sage, sautee about 30 seconds.  Add 1/2 chicken stock, 1 can of drained white beans, an entire package of spinach.  Sautee until wilted (I put the cover on for about 5 - 10 min.)  Add the shrimp back.  Add some feta.  Add some salt and pepper.

Again, this was good, but not knock your socks off.  However, I'm sure it was low calorie and low fat, so I will probably make it again.  Also, next time I make it I will probably put some bacon in it!!!
