Tonight, I had fish sticks. They were awesome. We've had a tough few days here in Deerfield. Tuesday was the Great Fall. Then since then, Lottie has been sad and clingy. I would too if my face looked like that. Then....came 2-3 weeks worth of poop. It came over the course of 2 days.
I think we are all set now. There cannot possibly be any more.
After battling 3 poop events, I was in no mood for a fancy dinner (not that I usually have fancy dinners). I made fish sticks. I cannot wait to make them again.
Cod sliced into 1/2 inch sticks
Whole wheat bread crumbs
Whole wheat panko crumbs
Dash of salt and pepper, parsley, and cayenne
One egg
Cut up the fish. Let come to room temp. Beat the egg in one bowl. Mix the bread crumbs, panko crumbs, and the seasoning in another bowl. Dip the fish in the egg, then the crumbs. Let them sit for about 5-10 min. While they are sitting, oil a baking sheet and heat it up in a 350 degree oven. Bake the fish for about 10 min, turning once. Serve with sweet potato fries and tartar sauce. Outstanding!!

Others meals today included yogurt with blueberries, lentil salad, a pear shared with the baby, grampy, and the dog. And at least two servings of fruit juice. I think I have to stop the juice. That was probably 400 calories in juice alone.
Thanks for the fish sticks idea! I plan on it with French Fries !! Will make Dad happy.
