Taco Chicken
I wanted to post the easiest and best spicy chicken recipe I have found. It makes chicken taco meat. Not too soupy, not too salty, and not too bland. Charlotte loves it with spinach and cheese in a whole wheat tortilla.
4-5 chicken thighs, skinless (mine are usually frozen like a brick)
2 tablespoons of homemade taco seasoning
Half a large jar of salsa. I use medium salsa without added sugar.
Pop it all in Your Sister's Slow Cooker on low. Come back in 6-8 hours. Take the thighs out and remove the bones, and shred the chicken meat. Return the chicken to the juice in the slow cooker and stir it up. Serve plain, in a taco salad, in an actual taco, in a quesadilla, or any other Mexican type food you can think of.. It's great.
