Pork Chops with Lemon Caper Sauce



Pork Chops with Lemon Caper Sauce

Brown the chops in olive oil in a skillet.  Cook until done, about 4-5 min each side.  Remove from
pan.  Add minced shallot to hot pan, cook until brown.  Increase heat to high, stir in 1 cup chicken broth, 1/4 cup lemon juice, 2 tablespoons of capers, and simmer until reduced at least by half.  Off heat, add 2 tablespoons of butter.  Pour over the pork.
