Vegetarian Day

I like to try to have at least one day a week be vegetarian.  Meatless Mondays is easiest to remember, (It has a nice ring to it) but I can't get it together on Mondays.  So this week....it was Thursdays.  I want to take credit for planning and effort to be vegetarian, but it happened completely by accident and was actually a product of poor planning on my part.

Oatmeal with blueberries, raisins, peanut butter, and honey for breakfast.  I like lots of stuff in my oatmeal.  One cup of coffee with cream and honey.

Huge salad for lunch.  Lettuce, broccoli, corn, peppers, cukes, cheese, carrots, and tomatoes.  Homemade salad dressing.

Dinner - Charlotte and I shared sweet potato "cookies".  I take the sweet potato and cut it into 1/4 inch pennies. then put on olive oil and cinnamon.  Bake at 450 for 20 min.  She thinks they are cookies. (Probably because I told her they were....)  She eats them up!  We also had a tomato salad with two different color tomatoes, onion slices, vinegar and feta.  Unbelievably good dinner, a last summer hurrah.


Something notable....there was a woman on NPR who said "The world would be a better place if everyone stopped pretending that kale tastes good."  I thought that was hilarious.  If she had a cookbook, I'd go buy it.
