Peanut Noodles.
This recipe has been cobbled together for about 4 other recipes. Namely from Cooks Illustrated and form Skinny Gina (?).
1/4 cup peanut butter ( I use natural )
1/4 cup honey
1/4 cup soy sauce
1T sirchia ( spelling?)
Mix, pour on hot rice noodles.
Add thinly sliced cucumbers, red peppers, and carrots. You can also cook up some sliced chicken with seasoning ( I forget it off the top of my head) and pop that in too. I want to try tofu because you know who won't eat the chicken.
Pretty, tasty, and a 2 year old will eat it!
Chicken spices:
1T chili garlic sauce (I use less than half of that)
1 T lime juice
2 cloves of garlic
1 T ginger
1 T soy sauce
2 t sesame oil
Marinate chicken for at least 1 hour. Discard the marinade, then pan fry in very hot pan to sear.
Add to noodles and vegetables. Serve hot.
