Asparagus Shrimp Salad

This salad is great way to start the detox after a long 4th birthday weekend from pizza, cake, candy, chips, and generally poor food choices from Friday evening to Sunday.  I adapted this from Simply Recipes and just added more vegetables, because we needed it last night.

First, have your parents bring you a bunch of fresh asparagus from the farm down the street.......

1 lbs asparagus
1\2 lbs shrimp
1 tomato - bite sized pieces
1\2 cucumber - bits sized pieces
peppers - bite sized pieces

1/4 cup olive oil
1 lemon - juiced
1 clove of garlic - minced
salt/pepper

Break off the ends of the asparagus, BOIL in salted water for 3-4 min.  tender, but still bright green.  Put in a ice water bath to cool off.  Put the shrimp in the same asparagus water and boil for 3 min.  put in the same ice water bath to cool off.

Cut all other veggies into bite sized pieces.  Put in a large bowl.  When cool, slice the asparagus on the diagonal (if you are feeling fancy) and  put in the bowl.  Add the shrimp. 

Add the dressing ingredients in to a mason jar.  Shake to mix, pour over the vegetables and shrimp.  Let it sit for a few min.  Serve.


It was awesome and just what is needed on a summer night.
