White Beans with Lemon and Parsley

Another summer salad - I am trying to find more interesting salads to eat this summer.  I would like to be more vegetarian - not totally vegetarian, mind you, but more......  We really only eat chicken and fish, but I'm getting sick of all the chicken, and I can't afford more fish.  I hears a story on NPR that Americans don't like to spend money on good quality seafood, so we get pretty poor quality seafood in our stores.  So, if I am only buying the ridiculously expensive stuff I can only get it once or twice a week....... therefore, more vegetables.

White Bean Salad with Tuna and Parsley
Ingredients:
1 can (15.5 oz.) white beans, rinsed and drained well
1 can Italian tuna in olive oil (5-6 oz.)
(or any tuna packed in oil)
1/2 cup chopped curly parsley
1/4 cup finely diced red onion or sliced green onion

Dressing Ingredients:
3 T good quality extra-virgin olive oil
2 T fresh lemon juice
black pepper and sea salt to taste

Drain and rinse the beans. make the dressing, let the beans sit in the dressing while you do everything else. 

Drain the tuna.  Chop the parsley and green onion.  Add it all together.  Let rest for about 30 min.  It's awesome.  I used more lemon in the dressing.

I made two batches this weekend...ate them both.
