I got this recipe from an e-mail. A few years ago, the husband of one of my students opened an Italian restaurant. He sends out e-mails as marketing and sometimes the e-mails have recipes. He used to cook at one of the best Italian restaurants in the area, and I LOVED their bruschetta. So, when he sent this recipe out, even if it wasn't the same recipe, I knew it was going to be good.
Red, ripe tomatoes
Balsamic vinegar - use the good stuff
Salt
Basil - thinly sliced
Chop the tomato into bite sized pieces. Put in a bowl, and cover with vinegar. Add a small bit of salt and the basil. Let it sit for about 20 min.
Fresh bread
olive oil - your best stuff
Cut the bread into slices, thick enough to hold the tomatoes, but so that you can still get your mouth around it. Drizzle with the olive oil. Either grill the bread, pan fry the bread, or broil the bread.
Put the tomatoes and basil on the bread. Serve. It's messy, but easily my favorite meal of the summer.
