Black Bean and Corn Salad

Yet another staple of my diet from Simply Recipes.  If I ever meet that chick, I'll buy her a glass of wine.  This is a great summer salad, easy to put together with things around the house, and it can be a whole meal.....  Probably not designed that way, but that's how we roll sometimes. 

  • 1  can of black beans, rinsed and drained (or 1 1/2 cups of freshly cooked black beans)
  • 1 1/2 cups corn cut off the cob
  • 1/2 cup chopped green onions  or shallots
  • 2 fresh jalapeño peppers, seeded and minced
  • 3 fresh plum tomatoes, seeded and chopped
  • 1/2 cup chopped fresh cilantro -  I don't use...
  • 2 Tbsp lime juice (about the amount of juice from one lime)
  • 1 Tbsp olive oil
  • 1/2 to 1 teaspoon of sugar (I never use it and the salad is fine...)
  • Salt and pepper to taste
 
Mix it together.  Chill for about 30 min.
