Really good, really simple, and totally summer. Also, very attractive....
One English cucumber - diced into bite size pieces
One tomato - diced into bite size pieces
One pepper - any color - diced into bite size pieces
1/4 cup olive oil
salt and pepper
1/3 cup crumbled feta
Put into a bowl. Mix. It's beautiful. You can also add artichokes or olives.... Less cheese, more veggies...what ever you want to do. It's wonderful. The kid and I just ate an entire bowl for dinner.
