Herb Crusted Salmon

From Cook's Illustrated.  made it with whole wheat bread crumbs.  Even the kid ate it, and that's saying something.....


Herb Crusted Salmon 4 skin on salmon filets (I did 1-1.5 lbs of center cut salmon)

2 Tablespoons butter
1/2 cup panko bread crumbs
2 Tablespoons beaten egg
2 teaspoons fresh thyme
1/4 cup chopped fresh tarragon
1 Tablespoon whole grain mustard
1 1/2 teaspoons mayonnaise

You are supposed to brine the fish, I don't have that kind of time.  Also, it's just one more bowl to clean.....

Melt the butter, add the bread crumbs and let them get all toasty (4-5 minutes).  Let it cool.

Beat the egg.  (2 T of beaten egg is just a little less than on normal sized egg).  Add the thyme to the egg.  Add the egg mixture to the bread crumbs.

In a separate bowl mix the mayo mustard and minced tarragon (or dried tarragon and 1/4 cup minced fresh parsley...)

Smear the mustard mixture on the fish, sprinkle the bread crumb mixture on top, press on.

Bake for 20 min at 350.

Awesome.
