- 6 Tbsp lime juice (from 3 to 4 limes)
- 2 Tbsp extra virgin olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon kosher salt
- 1 1/2 lbs boneless, skinless chicken breasts, thin cutlets
Black Bean Sauce Ingredients:
- 1 Tbsp olive oil
- 1/2 cup chopped red onion
- 2 cloves garlic, crushed and minced
- 1 (15 oz.) can black beans
- 1 3/4 cups water
- 1 bay leaves
- 1/2 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon Kosher salt, or more to taste
Make the marinade, add the chicken and toss to coat. Let sit for a few hours.
Saute the onions and garlic. Add the beans (wither with the liquid from the can, or with 1-2 cups of water). Add all the seasonings. Simmer. Use your nifty immersion blender for about 30 seconds.
Grill the chicken. Put sauce over chicken. WOW.
