Prosciutto Wrapped Salmon

This is my go-to salmon recipe.  I make it every 1 or 2 weeks.  It's simple, healthy, whole foods, no flour, no sugar, and even the kid will eat it.

Take a center cut of salmon
spread grainy mustard over it (maybe 1 tsp per portion)
wrap in prosciutto (or bacon)

Bake at 400 for 12-15 min. 

The bacon doesn't get too crisp, so I sometimes pre-cook it a bit.  The prosciutto works best. 

Serve with a  salad, with tomato bruschetta, white beans and tomatoes, or something light.

It's awesome.
