Meal Plan January


  • Roasted chicken thighs with Erica's marinade with roasted carrots and onions and mushrooms
  • Thai squash curry soup/squash apple bake for the kid
  • Curry chicken with dipping sauce and green beans
  • Salmon with lemon caper sauce with salad and green beans
  • Dumpling night (and leftovers)



Breakfast: overnight oatmeal or leftovers

Lunch: soup or leftovers
