No Flour No Sugar-Broccoli Soup

Well, today was a funny day.  Not ha ha funny, just odd.  Charlotte and I had to stop by work to change my time sheet.  That went just fine, then the wheels came off the wagon.  We went to Van Meter Drive to a snack and a nap......the snack went fine, but Lottie Lou objected, most strenuously, to the new toddler bed.  In desperation, we left in a rush for a 1 hour 15 min car drive through the hill towns. 

Then, back home to make the Broccoli Soup (Cook's Illustrated).  The fabulous recipe is posted on the left.  It has a pound of broccoli, an onion, 4 cups of spinach (the real recipe only calls for 2 cups) and broth.  It also has about 2 cups of cheese in it.  I added extra veggies to make me feel better about the cheese.  I also popped a Parmesan cheese rind in the pot.  Melty delicious.

Today I had coffee, homemade yogurt with honey and almonds for breakfast. 2-3 Clementines.   Another coffee (with cream and honey) at Van Meter Drive.  Lunch wasn't an option because I was wasting gas on route 9.  Dinner was about 2 cups of broccoli soup and about 1 cup of left over pulled pork.  1 cup of egg nog.  Charlotte likes egg nog.  After dinner snack was more pork and 2 left over holiday cookies. 

Starting next week, I am going to leave measuring cups out on the counter so I can appropriately measure how much food I am eating per serving.  Maybe I will treat myself to a new pretty, fun, set.  I am also going to reinstate my goal for at least 5 servings of vegetables and fruits a day.  It sounds rather basic, but I have to think about it in order to make it.
