Chicken Cordon Bleu
Take boneless chicken breasts and cut in half horizontally. Pound thin. Place one slice of ham and one slice of Swiss cheese on each cutlet. Roll up tight. Dip in egg wash, then coat in whole wheat bread crumbs. Place them in a baking dish (I use a pie plate so they are touching). If the rolls are touching, they give each other support so its more likely they will stay rolled up (and attractive). Bake at 375 for 25-30 min or until they are golden brown.
They are outstanding! Better for you than dipped in butter and rolled in white wheat crumbs. Serve with broccoli.
