Chicken Curry in a Hurry

Take boneless skinless chicken, slice them into small bite-size pieces.   Add one tablespoon Curry powder.Saute until done in large saute pan.

Remove chicken from pan. Saute one cup of diced onion four to five minutes. Add 1 tablespoon of minced garlic. Add 1 teaspoon of ginger. Add 1 teaspoon of curry powder. Add one can of coconut milk and return chicken to pan. Let simmer for 15 minutes. Add chicken broth if too thick.
Serve with brown rice.
