Tarragon Grilled Chicken

I cleaned off the grill for the season.  Now that Charlotte can walk around in the yard without me for a few minutes, I can fire up the grill without having to hold her back.  She just wanders away in the direction of my next door neighbor's garden and it gives me enough time to lite the grill and catch up to her.

Tarragon and Lemon Grilled Chicken - I got this from Kalyn's Kitchen (then changed it a little)

2 T mustard
2 T dried tarragon
2 T lemon juice
lemon zest
2 minced garlic cloves
3-4 T olive oil

Whisk it all together and marinate the chicken breasts for 1-2 hours, or all day (if you can plan that far ahead).  Then, just grill it.  This Kalyn character seems to be a very good planner.  I'm not there yet.

When they are cool, I chopped green pepper, cucumber, red pepper, and tomato, added the chopped grilled chicken, feta cheese, oregano and some olive oil.  OUTSTANDING salad.
