Roasted Green Beans

I cannot get enough of these green beans.  Neither can Charlotte.  It is one of 5 things I KNOW she will eat.  I'm so glad it's green beans.....
Mix one pound of cleaned, trimmed thin green beans with 2 tablespoons of olive oil and salt and pepper.  Put on a cookie sheet, or if you are feeling fancy, a parchment paper lined cookie sheet.  Add either feta cheese of parmasean cheese on top of the beans, and roast at 400 or 425 for 15-20 min until they are perfect for you.  I, myself, like my roasted vegetables very dark, almost burnt.  I go for a hotter oven and for longer times.....  I love them.  I can eat an entire pound of green beans just in one sitting.

It's pretty fun thinking of things that make you happy.  I thing just thinking of these things is making me happy.......
