White Bean Dip

On Tuesday, I had someone from work over and I make White Bean dip with cut fresh vegetables.   It was really good.

1 can of Canelli beans, drained and rinsed
1 can artichokes (you can roast them at 400 for 30 min first if you want)
2-3 cloves garlic
2 T lemon juice (juice from 1/2 lemon)
salt ane pepper
1/2 cup shreded parm cheese
1/4 cup olive oil

Pop it all in a food processor (use your mother's because the large one works much better than the mini one).  I pulsed the first 6 ingredients first, then added the oil slowly.

It's a great dip for veggies, crackers, or to feed your one-year-old for lunch.

This evening I am going to a going away party.  I made another batch of the dip and cup up some veggies.  I am going to try to eat only that at the party....we'll see.
