I had brunch with a friend's family today. She served spinach egg fabulousness!! It was so good, I made it again for dinner. All vegetarian, all outstanding. No flour and no sugar.
I lost 2 pounds.
Take a beautiful, ripe tomato and cut it into 1 inch slices horizontally.
Creamed spinach - steam the spinach, chop it, put in frying pan. Let it get hot enough to evaporate the last of the liquid. Add cream, a little nutmeg, and salt and pepper. Let simmer until thickened.
Poach the eggs.
Make crispy bacon lardons.
Put the tomato slice on the plate, top with the egg, drizzle the creamed spinach, and add the bacon on the very top.
