Roast Chicken with Veggies No White Flour no White Sugar

Well...I have gained weight since the last time I posted.  I have gained a significant amount of weight.  The holiday season is killing me.  Since Thanksgiving, it's been a free for all with sugar and flour.  I make holiday cookies for my students, and ate some of them.  I make candied nuts for my students, and ate some of them.  Then I made toffee for my students, and ate most of that too....  I am out of control.  Then, my damn students gave me some cookies and gift certificates to the local sandwich place (served with potato chips!!).

I tried to get it back together today.  It was just Charlotte and I all day today, so there were no obligations that revolved around food, which always makes it easier.  We played inside for a while, napped (me too), went to the town hall to get garbage bags (small towns without trash service will kill you), went to the library, then back for a long drawn out bath and some reading.  It was a great day. 

This morning, we shared a bowl of oatmeal with raisins, honey, and peanut butter.  Lunch was left over chicken, a couple cookies (just to finish them and get them out of the house!).  (I swear.)

I made a batch of whole wheat bread.  I only made one loaf becuase I usualy don't go through it fast enought to warrant having 2 loaves around. However, today I managed to eat about 1/2 the loaf.  How did that happen?!?!

Dinner was roast chicken thighs with potato, onion, mushrooms, and carrots.

I brown the chicken thighs first, in a heavy pot.  Leave them skin side down for about 10 min to get nice and brown.  Add them to the roasting pan.  Then quickly brown onion wedges, potato cubes 1-2 inch cubes), mushrooms, carrots, and any other vegetables you like.  I usually add artichokes too. 

Throw it all in the roasting pan, sprinkle with salt, thyme, and rosemary, and olive oil.  Throw it in a 400 degree oven until the potatoes are soft and browned.

Lovely.  No flour, no sugar, and it's filling.

I have GOT to get back on track.  I think this calls for lentils and beans. Maybe an all veggie week.
