Roast sweet potatoes
chip artichokes, mix with olive oil and park cheese. Roast in a flat layer on sheet pan.
mix with arugula, scalions, and lemon zest.
Dressing:
3 T Olive oil
2 T greek yogurt
1T maple Syrup
1 T mustard
2 t balsamic vinegar
1/2 t oregano
1/2 t cumin
salt
